Hi Rod,

Most shell eggs that you buy in the grocery store are not pasteurized. If they are, it will be clearly marked on the label. Processed egg products, such as liquid eggs sold in a carton, however will have been pasteurized.

In Canada, pasteurization is not a requirement.  Shell eggs sold at retail have met the Canada Grade A requirements and have been washed in warm water with a mild food-safe detergent and are free of cracks to ensure food safety.
